Method

In December and January, after buying the best Thassos olives from local farmers, we dry them more with sea salt to release the bitter taste. This process is all natural and it takes about 5 months until the olives are ready for eating as you know them.

Thassos Thrumba or Stafidaki olives are the specific black wrinkled olives you can find only on the island of Thassos. The harvest period for this delicious table olives is taking place each winter in the months of December and beginning of January, and the olives are black and winkled on the tree at the time we collect them.

In shop

In the month of May when the curing process is complete and the bitter taste is almost gone the olives are ready to be packed. We prefer to have always freshly packed olives so the packing procedure continues all summer long.

In our shop you can find different sizes of olive jars : 170 gr, 250 gr, 500 gr, 700 gr, 1 kg and 2 kg.

How should I store the olives?

Natural black wrinkled olives is a highly resistant fruit that can be ate all year long. We recommend to keep them in cool and dark place, away from light and heat. Also the best way to keep them fresh for a longer time is in the refrigerator.

How should I consume them?

You can eat them straight from the jar, they are ready when you buy them from us, or you can pour a little Sotirelis extra virgin olive oil on top for an extra taste and appeal. You can have them with your salad, as an appetiser, as a healthy snack or over your pasta. They are always delicious.
